Preparing A Mother Culture

All mother cultures should be made with Sterilized Milk.

To sterilize your milk, place 1 quart of milk in a sterilized canning jar. Screw on lid and place jar in a pot of water, coverred 1 half inch above the top of the jar. Boil the water for 30 minutes. Remove the jar of milk and proceed with beginning your desired mother culture process


Mesophilic Mother Culture

To one quart of sterilized milk, cooled to 76 degrees fahrenheit, add one packet of C101 starter culture. Stir in the culture and cover the jar. Allow this to set in a warm place, undisturbed for 12-18 hours until thickened. Place in your refrigerator and use within one week. To reculture, follow the same procedure as described the in milk sterilization process, but instead of a packet of culture, add two ounces of the prepared culture from your previous batch.


Thermophilic Mother Culture

To one quart of sterilized milk, cooled to 110 degrees fahrenheit, add one packet of C201 starter culture. Stir in the culture and cover the jar. Allow this to set in a warm place, undisturbed for 12-18 hours until thickened. Place in your refrigerator and use within one week. to reculture, follow the same procedure as described in the milk sterilization process, but instead of a packet of culture, add two ounces of the prepared culture from your previous batch.


If you will not be using all of your mother culture within one week, you can portio nit out into small jars and store them in the freezer. These should be good for 30 days if stored in frozen conditions.
