General Storage

Liquid Rennet

All liquid rennet (Vegetarian or Animal) should be stored in the refrigerator upon receipt.

DO NOT FREEZE LIQUID RENNET.

Rennet Tablets

  • Vegetarian- Shelf stable at room temps for at least one year.If kept in freezer, will keep for at least 5 years.
  • Animal- Should be stored in the refrigerator. DO NOT FREEZE ANIMAL TABLETS.

Cultures, Mold Powders & Lipase

Should be stored in the freezer. Shelf life varies from product to product, anywhere from 6-18 months.

Cheese Coloring

Should be stored in the refrigerator upon receipt.

The following items are shelf stable and will keep for 5+ years if kept properly sealed:

  • Citric Acid
  • Calcium Chloride
  • Ash
  • Tartaric Acid
  • Cheese Salt
  • Herbs

Kit Storage:

The following kits do not require any refrigeration and are shelf stable for at least one year:

  • K2- 30 Minute Mozzarella andRicottaKit
  • K3- Beginner Cheese Kit (Paneer, Ricotta, Mascarpone)
  • K14- Mascarpone Kit

The following kits contain cultures that will require freezer storage:

K1- Basic Cheese Kit Contains cultures that will need to be kept frozen.Cultures/rennet tablets are in a separate bag that can be removed for storage without damaging the box or other kit ingredients. The kit can then be placed on a shelf for display and cultures/rennet provided to customer upon purchase.

K4- Yogurt Kit Contains cultures that need to be kept in the freezer. See Basic Kit for display info.

K6- Goat Cheese Kit Contains a culture that needs to be kept in the freezer. See Basic Kit for display info.

K7- Gourmet Home Dairy Kit Contains cultures that need to be stored in the freezer. See Basic Kit for display info.
