Lipase Usage

General Directions


Lipase should be added prior to the rennet.


First, dissolve lipase in ¼ cup cool, non chlorinated water. We recommend no more than 1/4th teaspoon per 2 gallons of milk.

Let the solution sit now for 30 minutes at room temperature.

Then add the mixture to milk and stir thoroughly. This will ensure it is evenly distributed in the milk.
